yo, dude cool. :) enjoy the new camera. get a flickr account. The night shots, adjust your white balance a bit. The shots look a bit too warm. Start shooting RAW. Use Photoshop. I will stop speaking in sound bytes.

Take a good sweater and defn take an umbrella. Hong Kong rains like singapore. Lovely place to gop around on weekends.
You should try and go to all the local markets (they are a great sight even for shopping averse people).
Try and take the ferries across the harbour at night. It is very beautiful.
Are you going on work or on a holiday? How long will you be there?

If you like night life then definitely go to Lan Kwai Fong. The food is good in Hong Kong (as long as you are not veg) some very good italian and north indian food as well.
If its a clear day or evening, take the Peak tram to Victoria Peak. The view if fantastic.
